Ingredients:
1 French baguette, sliced into 1/2-inch slices
2 tablespoons honey
2 tablespoons olive oil
1/2 teaspoon lemon juice
1/4 teaspoon garlic powder
Salt and pepper to taste
1/2 cup fresh cranberries, chopped
2 tablespoons fresh parsley, chopped (for garnish)
Directions:
Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and drizzle with olive oil. Toast in the oven for 5-7 minutes or until golden and crispy.
While the bread is toasting, combine the crumbled feta, honey, lemon juice, and garlic powder in a food processor. Blend until smooth and creamy.
Season the whipped feta with salt and pepper to taste, and transfer to a serving dish.
In a small bowl, combine the chopped cranberries with a little honey (about 1 teaspoon) and toss to coat.
Spread a generous amount of the whipped feta mixture onto each toasted crostini. Top with the cranberry mixture and garnish with fresh parsley.
Serve immediately and enjoy!
